Food Preparation & Service - Level 2

Introduction to this course

This study programme, supported by the Craft Guild of Chefs and designed with the help of the Hospitality industry, combines two Hospitality study programmes, the Diploma in Professional Cookery and Certificate in Professional Food & Beverage Service, covering food preparation and cooking, food safety in the workplace, teamwork, communication and customer care.

There will be relevant trips throughout the year, as well as end-of-year excursion and you will complete at least sixty hours of work experience as part of this study programme.

Entry Requirements

You must have at least three GCSEs at grade A* to D, preferably including English and maths. You must have an Introductory Diploma in Professional Cookery or similar and/or relevant experience of working in the Catering industry.

Career Prospects

Upon successful completion of this qualification, you can progress to the Level 3 Apprenticeship in Professional Cookery, or a Level 3 qualification in Advanced Professional Cookery or Food & Beverage Service Supervision.

How will I be assessed?

Assessment is through written assignments and practical sessions in our training kitchens and the Da Vinci Restaurant, which is open to the public. You will also be required to complete specific, tested, practical tasks during end-of-year practical assessments.

  • Prepare and cook rice, pasta , grains and egg dishes
  • Produce hot and cold desserts and puddings
  • Produce paste products
  • Produce biscuits , cake and sponge products
  • Produce fermented dough products

Expenses for this course

New kit and uniform - Approximately £220. If you already have a Level 1 kit, you can top it up for approximately £60.
