Advanced Professional Cookery - Level 3

Introduction to this course

During this study programme, you will develop advanced, professional culinary skills and fundamental supervisory skills, preparing you for a successful career in the Catering & Hospitality industry. Topics include advanced meat, poultry and game, complex vegetarian/vegetable dishes, desserts, petit fours and decorative items, fish and shellfish, gastronomy and patisserie and fermented goods, as well as supervision and team leading. You will gain experience in the well-equipped, professional kitchens of our highly popular restaurant, the Da Vinci.

Visits to and from local suppliers underpin all aspects of this study programme, including wine appreciation and demonstration and you will complete at least sixty hours of work experience as part of this study programme.

Entry Requirements

You need to have successfully completed the Level 2 Diploma in Professional Cookery or have relevant industry experience.

Career Prospects

After gaining this qualification, you can progress to employment or a degree level qualification, such as a Hospitality Foundation degree.

How will I be assessed?

Assessment is though written assignments and observed practical sessions in our training kitchens and Da Vinci Restaurant, which is open to the public. You will also have to complete specific, tested, practical tasks during your end-of-year assessments.
